Spicy and Tangy Tomato Rice

     One of the many things I adore about my daughter is she loves eating raw vegetables. But with present days, however natural and nutritious a raw vegetable may appear to be, we can no more trust those we buy in the market with all its chemicals/ pesticides. But anyways, she just loves eating green peas, tomatoes, onion and carrots in raw natural form. Esp in particular she loves tomatoes. If I can only afford her some organically grown veggies that would do good.

      So sometime back this week I chose to make Tomato rice coupled with Curd rice for lunch. Fortunately my cute little 4 yrs old loves tomatoes in any form, cooked, mashed, raw etc. So I had the confidence that I can satisfy her palate.  So here goes the quick recipe to make the spicy cum tangy tomato rice.

Note: Recipe is almost same as my carrot rice recipe. But here I chose to add Onion and garlic and I felt it tastes better with them, whereas I avoided it for carrot rice. I replaced chilli powder with crushed green chillies. May be you can try this without onion and garlic too. Up to your preference. 

Verdict:  Another quick to make recipe for your meals when you are short of time. Most importantly, my husband who hates tomatoes even approved making it once in a while. Thanks to him for his nod.   

Ingredients :

              White Rice  - cooked from 1 Cup of rice
              Sliced Tomatoes  - 2 Cups
              Spices : Cumin Powder, Coriander Powder, Turmeric , Kitchen King Masala

              Crushed garlic pods - 4 to 5
              Chopped and Crushed green chillies - 2 long chillies 
              Onions - 2 Medium sizes, chopped
              Cumin seeds
              Coriander leaves
              Sesame Oil
              Salt

Way to go:

             Cook the rice enough to serve the people you are targeting. I used a 2 ltr cooker and it was done in a short span of time. Once rice is done, allow it to cool and spread on a plate and ensure rice is not mushy. Now lets make the tomato mix.

  •             Heat little oil in a kadai and crackle the Jeera seeds. 
  •             Add crushed green chillies and cook it well in low flame.
  •             Add and saute crushed garlic, and chopped onions. Cook till onions turn transparent.
  •             Now add the sliced tomatoes and cook till it turns mushy and  blends well.  
  •             Once tomatoes are cooked, add turmeric, Corriander powder, Red chilli powder and a pinch of kitchen king masala. 
  •             Add salt to taste and cook for few mts. Let all taste blend well.
  •             Add chopped Coriander leaves to the above mixture and mix well. 
  •             Taste it once and if needed adjust salt or spices to match your taste. 
  •             Turn off the flame and allow it cool.             
 Now take the tomato mix prepared above, and mix it well gently with rice using your hand. If you want it warm, you can quickly warm the Tomato rice in your microwave oven before you eat. Serve it with Papads or fryums. Pack it for your kids lunch box for a change.
