This is one recipe that is quick to make. I would call it a Lazy Day recipe. The first time I made it, my daughter (10yrs) was hanging around in the kitchen and helping me with the keeping the ingredients ready. She got the hang of it instantly, and then she managed to make many more herself !!! So this recipe is special for me in that way. First recipe my kid made on her own with me not around in the kitchen.
Ingredients:
- Whole wheat flour - 1 cup
- Powdered Organic Brown Sugar - 0.25 Cup
- Melted Ghee -0.5 Cup ( Go for ghee if no unsalted butter handy)
- Baking powder - 0.5 tsps (Et-mi baking powder)
- Baking soda - 0.25 tsp ( I used Tata I Shakthi soda)
- Milk - two to three spoons
- Cardamom Powder - Pinch for flavor
- Salt a pinch
- Preheat the OTG at 180 degrees for 15 mts.
- Meanwhile take a bowl and add one cups of whole wheat flour onto it. Now add baking powder and baking soda to it. Give it a mix with a spatula. Add in the pinch of salt too, and mix well.
- Take another bowl, add melted Ghee, Cardamom powder and powdered sugar. Mix them well with a spatula.
- Once done, now add the dry ingredients to wet mix (wheat flour-soda-bakingpowder mix) and blend well. Batter should a very soft dough.
- Now split the dough into small balls, and press them with hand to make flat circles. Trim them with a cookie cutter to your desired shape. Well, I used a bottle cap to make fine circles 😉
- Line them on a baking tray. Now place the tray with batter in the pre heated OTG (Oven) in the central tray with both the rods turned on and bake it for about 10 mts at 150 degrees.
- Once done, insert a knife into the cake to check if it is cooked well. If cooked well, the knife should come out without any batter sticking to it. If not, place it back in oven and cook it for another 10 mts. Mostly by this time it would have turned brown on top and would have got cooked crispy within.
- Don't immediately take it out from the Oven, leave it in the oven for another 10 mts till it cools
- Your Yummy crispy cookies are ready 😋.
