Paasiparuppu Kanji ( Moongdhal Badam porridge)

I am one of the person always taken for granted for working from home. It is a fact that working from home gives me immense flexibility to balance out personal life and work life. But that doesnt mean I am being paid for doing nothing. Like every women, I multi task between work, home, kids school and after school activities, helping them in their competitive exams, taking care of my own time for exercising and meditation, and then this blogging so I can remember and refer back to recipes that I have successfully tried... Even my hands are full. But hardly people give that sympathetically understanding towards me.

Anyways, there are days when I underestimate quantity while cooking to pack for lunch box. As a result I end up having to cook lunch again just for myself. Then I get too tired to get inside the kitchen and cook a detailed lunch only for myself. That is when I resort to this fantastic recipe which comes handy with lots of nutrition

Ingredients:


            Roasted and finely ground Moong Dhal - 1 Cup
            Badam - 0.5 Cup soaked in hot water for atleast two hours.
            Shredded coconut - 0.5 Cup
            Elaichi powder for flavor
            Palm Jaggery - 0.5 cup or more ( as per taste)
            Dry ginger powder - Half a spoon
           

Way to go


  • Take a kadai and pour two cups of water. Now add the ground moong dhal powder and mix well to avoid lumps
  • Now turn on the heat and keep it  low flame till the end of the recipe. Keep stirring the moong dhal in water till it is well cooked without lumps, and its raw smell is gone.
  • At this stage add the Plam jaggery powdered or melted/filtered, and keep stirring so they blend well. Add also the dry ginger powder and elaichi powder. Stir for some two minutes.
  • Parallely blend the soaked badam and coconut to a fine chutney consistency.
  • Pour this mixture to the moongdhal in kadai and cook in low flame till it starts bubbling. Turn off the stove at this stage.
  • NOTE: Consuming overcooked coconut is not good as it will increase cholestrol in the body.
  • Now adjust for consistency by adding water, jaggery as required. You can heat for few more mts as per need to get the right consistency and taste.
  • Now tasty and healthy Moongdhal Badam Kanji is ready. It is enough to fill your stomach and this can also be just had for breakfast or just refill for lunch.
