Mango Cake

Summer means Mango, is it not? If not in this season when we will be get to delish this king of fruits. We get Mangoes in lots of varieities such as Dusseri, Langda, Alphonso, Kesar, Badam, lalbaug etc. My favorite has always been Kesar, and then the next choice of mine would be Dusseri. Not sure why people fall for Alphonso. I find it too costly and not worth the chase. You will get better flavor with Kesar. Most of my mango flavored recipe I use Kesar. 

     Some of the items I made for this summer using Kesar are:

Aam Ras, Mango Sheera (Kesari), Mango Ice Cream and then Mango Cake.  

Recipe:                
  • Maida - 1 cup
  • Mango Puree - 1 Cup
  • Condensed milk - 200g
  • Butter - 80 gms
  • Powdered Sugar - 100 gms
  • Cashew nuts,Almonds grated, Raisins - .25 cups
  • Baking powder - 1 tsps
  • Baking soda - 1/4 tsp
  •  Milk - 3 - 4 tbps

Way to go: 

  1. Preheat the oven at 180 degrees for 15 mts.  
  2.  Meanwhile take a bowl and add two cups of maida onto it. Now add baking powder and baking soda to it. Give it a mix with a spatula, and then sieve them through a sieve twice to ensure they are mixed well. 
  3.  Now add the condensed milk, powdered sugar, butter and mix well. Now add the pureed mango and whisk well with hand for two to three minutes. There is no need to go for hand blender etc. Just whisking well with hand for couple of minutes will do.
  4. Make sure the batter is not too thin or thick. 
  5.  Now add the grated/crushed dry fruits and give gentle mix.
  6. Grease the baking tray and coat it with Maida. Line it with Butter paper if you have, else just pour the batter evenly on it.
  7. Now place the cake tray with batter in the pre heated OTG (Oven) in the central tray with both the rods turned on and bake it for about 20 mts at 180 degrees. 
  8. Once done, insert a knife into the cake to check if it is cooked well. If cooked well, the knife should come out without any batter sticking to it. If not, place it back in oven and cook it for another 15 mts. Mostly by this time it would have turned brown on top and would have got cooked soft within.
  9. Dont immediately take it out from the Oven, leave it in the oven for another 30 mts till it cools down.
  10. Now take out the cake and enjoy the moise mango cake. If you wish coat it with a layer of icing sugar, decorate it to your wish to add more richness to it.
