Pineapple Kesari

After having landed in Maharashtra, for the first time I tasted fruit kesari. The most common version served is Banana kesari, which is served as prasad end of the pooja.

   So I knew the  banana fruit kesari version very well. All you have to do is add nicely smashed banana and half a cup of warm milk when rava is half cooked, and mix well and continue to cook until nice Kesari consistency is obtained. Of course we keep adding Ghee as process to enrich flavor.

  But I always wanted to try out pineapple kesari. Recently I bought a full sized pineapple craftily peeled by the fruit seller making it easy for me to just dice and use it in the recipe. Now jumping to the recipe...

Ingredients:

           Serving : A family of four

           Pineapple - One full long pineapple, peeled and diced into small cubes.
           Rava or Sooji - One cup full
           Milk - Quarter cup
           Sugar - One cup full ( if you do not want it so sweet you can reduce it to your taste)
           Ghee - Enough to enrich flavor of Kesari
                           
 Way to go
  • Mix the pineapple pieces with 2-3 spoons of Sugar and keep aside for atleast 30 mts.
  • Once done, boil water in a kadai and add the dice pineapples into it and cook until soft. Which would take around 5 to 10 mts. You can add yellow food color a small pinch while boiling to get a dashing yellow color end of it to your kesari. Dont throw away the boiled water as we can use it in making the Kesari
  • Heat Ghee in a kadai, and roast cashews (broken) in it in medium flame.
  •  Now add rava to the above and roast in medium low flame till aroma comes ( do not over roast to brown color). 
  • Add the boiled pineapple pieces along with water to Rava. Make sure the water you add is atleast two cupfuls to one cup of Rava. Ensure this ration is taken care of. If needed you can adjust water quantity to get the right ratio.
  • Now continue cooking in medium flame until all water is absorbed into the rava. At this stage add the Sugar and continue cooking until all Sugar melts and blends well with Rava to give your tasty Kesar.
  • Serve your tasty Pineapple Kesari hot and sweet.
