Mutter Paneer Sabzi

  Simplest of all... Tastier.. Mutter Paneer Sabzi. A quick to make recipe to go with your Roti, Naan or Chapathi.

Ingredients:

           Serving:  3

            Paneer cubes  - 200g pack sliced into small cubes
            Onion chopped - 2 big sized.
            Tomato sliced - 4 to 6 medium sized
            Ginger paste - 2 tbsp, Garlic paste -  2 tbsp - Or you can use Crushed ginger and garlic

            Spices:
                 Half a spoon each of - Corriander powder, Turmeric powder, Chilli powder, Cumin powder, Kitchen king masala
                 Bay leaves, Cloves, aniseed ( one or two of each)
           Cumin seeds
            Cashews - 10 nuts
            Milk - 1/4 Cup
            Salt to taste
            Butter - 250 g 

Way to go:


  •  Heat two to three spoons of butter or two ladles of refined oil in a kadai, and when it is melted and hot add the cloves, aniseed, bayleaf, saunf, lavang etc.
  •  Quickly add chopped Onions and fry in medium low flame until they turn pink or even finely roasted. 
  • Now add the crushed garlic and Crushed ginger ( or its paste) and saute for a minute. 
  •  Now add the sliced tomatoes and saute in medium low flame. Stir periodically to avoid the mixture getting burnt. Cook still tomatoes turn really mushy, almost into a paste and mixes well with onions. 
  • Now add the peas into it and cook in low flame for two minutes. 
  •  Now add the spices (Corriander powder, Turmeric powder, Chilli powder, Cumin powder, Kitchen king masala) and mix well. If the gravy is too thick add a cup of water and cook in medium low flame. At this stage also add salt to taste. 
  •  You can adjust water or cook more to bring the right consistency. Test for salt and spiciness (red chilli powder) and adjust the same as required.
One last step to get it:
  •  Now add the cashew paste and mix well and cook for two to three mts.
  •  Adjust for the salt and consistency of the gravy with milk or with water to make it thinner if required. 
  • Coat with a layer of Malai from milk if you have which is optional. 
  •  Add the paneer cubes after draining them off the water they were immersed in thoroughly. Cook in low flame for one or two mts and then turn off the heat.
