Ellu Kuzhambu ( Sesame Kuzhambu)

        Elaithavanukku Ellu, Kozhuthavanukku Kollu. Here goes another Ellu recipe I tried. Ellu kuzhambu. And it tastes real good and also quick to make.

Ingredients :

  To grind :


              Black Sesame (Til, Ellu)seeds - 2 handsful
              Toor Dhal - 1 handsful
              Urad Dhal - 0.5 handsful
              Red Chillies - 5 to 6 long red chillies, broken into halves
             
To make Tadka:

              Jeera  - 1 Spoon
              mustard seeds - 1 spoon
              Curry leaves - 1 spoon


              Sesame Oil

             Turmeric powder
              Salt to taste
              Lemon sized ball of Tamarind soaked in water.

Way to go:

  •       Dry roast the sesame seeds and it might pop while roasting. Do not over roast it or burn it. Once popping slows down take it and keep it aside.
  •       Grind them into a fine powder and keep aside
  •       Now heat two spoons of oil in a kadai, once hot add red chillies, Toor dhal , urad dhal and roast to slight brown and keep it aside. If red chillies are roasted you can take them out quickly so they don't turn  black. Dals might take a while to get roasted but.
  •       Grind the dal and red chillies into a fine paste with little water and keep aside
  •       Now heat the kadai with two spoons of oil, and when oil is hot, add mustard seeds, Jeera and crackle it. then add curry leaves and saute for few seconds. 
  •       Now add the tamarind juice extracted to the kadai and cook until raw smell goes. 
  •       At this stage we can also add a spoon of turmeric powder.  
  •       Once raw smell of tamarind goes off, add the ground paste of dals and red chillie and cook for two minutes and then add the Sesame / Til powder and mix well. 
  •       Add salt to taste, stir and cook for few more mts to a thick kuzhambu. Consistency should be thick-pourable.
Drizzle Til oil one or two spoons on your cooked white rice, add few spoons of Ellu Kuzhambu. Mix well and relish the taste. Serve it with Papads or fryums.
