Simple Vegetable Fried Rice

  Fried rice. Quick to make. Simple dinner recipe. Jumping onto reciepe.

Recipe:

                  Basmati -  2 Cups ( washed, and soaked in water for an hour around, and drained off water)      
                  Carrot, beans, Spring onion green part - Finely chopped ( chop them small,thin lengthwise)
                  Spring onion white bulb part finely chopped
                  Pepper Powder
                  Sugar to sprinkle for taste
                  Three spoons of refined oil
                  Salt as required

Way to go:                


  • Heat water in Kadai, in the ratio of 2:1 or 1.5:1 based on the basmati rice quality. Once water is hot boiling, add the basmati rice. Reduce the flame to medium low. Cook for about 5 minutes and keep tossing the rice to avoid it sticking to the bottom. Once grains are half cooked ( pick few grains and try tasting them), turn off the heat. Drain the water completely and allow them to cool.
  •   Heat a kadai with three spoons of oil and heat in medium low heat. 
  •    When oil is hot, add the veggies and chopped spring onion to saute in medium low heat.
  •    Now sprinkle the black pepper powder (half a spoon), salt to taste, and very little sugar to add flavor to taste. No hard and fast measurement. Adjust it to taste. Keep the sugar very minimum just to boost the flavor. 
  • Cook enough to make the veggie crunchy but not too soft or overcooked end of it.
  •  Now add the basmati cooked rice, and gently turn and toss, so the veggies, spices and rice mix well. 
  • Serve hot with Tomato sauce. Or side it with Manchurian gravy.
