Paneer Bhurji


If there is something you can quickly make with home made Paneer, it is Paneer Bhurji. Well, expert cooks might see more options. But for with home made heavily crumbled paneer, I see the easiest way to use it is to make Paneer Bhurji recipe.

Ingredients:
       
Home made paneer ( or store bought) crumbled - 1 Cup, well if it store bought defrost it and then grind it into crumbles.

Onion - 2 big chopped finely
Tomato - 4 medium tomatoes chopped finely
Corriander leaves - Chopped finely
Garlic - 4 to 5 pods crushed finely
Green chillies - two to three chopped finely
Ginger - 0.5 inch crushed finely

Spices: Garam masala, Corriander Power, Turmeric powder, Chilli Powder. - Pick the quantity to your taste.
Salt

Oil - Three to four spoons
Cumin seeds - 1 Spoon

  •  Heat the oil in a Kadai and when hot crackle the cumin seeds
  • Add the crushed ginger, garlic and green chillies, and fry in medium low flame
  • When fried well, add the chopped onions and fry till onions turn transparent. Keep the heat in medium low flame through to avoid burning.
  • Now add the tomatoes and cook until tomatoes are soft. Add little water if the mixture is sticking to bottom.
  • Now add the spices and salt to taste and cook for three to four minutes until they blend well. Taste the gravy and adjust spices to suite your flavor. Bhurji should be thick and almost dry and not watery, so cook enough to reach this consistency.
  • Now add the crumbled paneer, and chopped corriander leaves. Stir well. Cook for two to three minutes in medium flame. 
  • Turn off the stove and serve Paneer Bhurji hot with Rice or Roti.
