Suyyam / Sukiyan - A sweet delicacy from an Iyer's Rasoi

Suyyam is a sweet commonly made in Iyer circles. It is a simple to make and it is sweet to taste.

Ingredients:

           Serving : 10 to 15 Suyyams

           Channa Dhal - 2 Cups
           Jaggery - 2 Cups
           Rice flour - 2 Spoonfuls
           Maida - 1 Cup
           Turmeric - 1 Spoon
           Salt - A pinch for taste
           Powdered Elaichi for flavor

           Refined oil - Good enough to immerse and fry Suyyams
                           
 Way to go



  • Add two cups of water and pressure cook Channa dhal for two whistles. Once pressure is gone, open the cooker and drain the water totally. 
  • Take the cooked chana dhal and grind it to fine wet powder in a mixer. Do not add water when grinding. 
  • Now break the jaggery and add it to powdered chana dhal and give another stir in mixer to they blend well to make Poornam.
  • Now take the sweet poornam and make lemon sized balls.
  • In another bowl, add the rice flour, Maida flour, turmeric and salt. Mix them and add water to make dosa like batter. 
  • Now heat the refined oil in a kadai in medium flame, and when oil is hot, immerse the poornam in the batter made, and drop them in oil in batches. Fry them as you would fry a vada to light brown and ensure all sides are fried enough.
  • Take them out of oil once done, and drain them thoroughly of oil
  • Your tasty Sukiyan / Suyyam is ready to serve.
