Pal Paysam ( Pressure cooker method)

For any festival in South, even if one doesn't get time to make a feast and do N recipes, atleast you can expect one dish to keep it simple. That is Kheer or Paysam. Payasam is simple to make and it is delicious too. And it is often presented as a prasad ( sacred offering) to the deity. I often make Pal payasam for most of the festivals at home. Here goes the recipe.

Ingredients:

           Serving : Four to six cups
           Milk - One litre
           Sugar - 2 Cups ( or more if you want it sweeter)
           Elaichi for flavor ( three or more pods)
           Badam, Cashew ( few broken) , Raisins
           Ghee - four to five spoonfuls
           white raw Rice - two fistful        

                            
 Way to go


  •   Pressure cook the raw rice in milk using a pressure cooker. I used three litre pressure cooker for this. Directly keep the contents on pressure cooker without any container inside it. Cook it for three whistles and turn off and wait till pressure ceases.
  •  Once done, open it. You will see that rice is cooked well. Now add the Sugar and dissolve it. Add the elaichi for flavor. Cook the mixture in medium low heat till the quantity reduces by 25%.
  •  Turn off the heat. Your base of Paysam is done.
  •  Heat Ghee in a tadka pan, and add the broken cashew, badam fry them, and finally add raisins and turn off the stove. 
  • Add this fried dry fruits to the Payasam.
  •  And now serve this tasty payasam hot and sweet.
