Maharashtrian Vegetable Poha

A Maharashtrian delicacy. A simple nutritious food that fits in your breakfast platter. Vegetable Poha.

Ingredients:

           Serving : Serves three.

            Three big sized potato ( peeled and diced to small cubes). Immerse the diced potatoes in water to avoid oxidisation
             Three big long carrots ( peeled and diced to small cubes)
             Three medium onions ( peeled and sliced thin)
             Green chillies ( Four long chillies sliced to thin cubes)

             Poha (Aval) - 2 Cups or little more ( according to taste). 
             Sugar
          
             Mustard seeds, Cumin seeds and three spoons of Refined oil for tadka
             Salt to taste

            Lemon juice ( one or two spoons) - Optional
            Curd - Optional

            Finely chopped corriander leaves for garnishing.
               
 Way to go

  •   Heat oil in a pan and when hot add the mustard seeds to crackle them and quickly add cumin seeds. Do it in medium low heat to avoid burning.
  •   And the green chillies and fry them, and once done add sliced onions and fry them to transparent.
  •   Once onions are done, add the diced potato and carrots ( drain them off the water totally when you add). Add salt to your taste and mix them all well. Turn off the heat close to low. Cover the pan with a lid with space of steam to escape.
  •  At this point, take the poha wash them thoroughly in water and quickly drain the water totally. Now sprinkle two spoons of sugar and mix well. Let the wet Poha rest as the veggies get cooked. 
  •  Check every 2 mts and give it a stir to avoid burning and sticking to bottom. Cook them till veggies are soft. 
  •   Once veggies are cooked, add the wet Poha and mix them well. Cook them for one or two minutes in low heat, and turn the stove off. Your Veg Poha is ready now.
  •  Now you can garnish with finely chopped corriander leaves. Before garnishing, you can also add squeeze lemon juice to the above made veg Poha. If not lemon juice, you can also add few spoons of curd and mix well to Poha. But Veg Poha does tastes good without these ingredients.
