Gulab Jamun and Shahi Tukda

 Moving to the sweetest corner of the kitchen space, I made Gulab jamun and Shahi tukda in the easiest way possible. Here goes the recipe:

Gulab Jamun: Just buy the ready made Gulab Jamun mix from trusted brands and follow the recipe on the pack. It takes only 15 mts to get your Jamuns ready, and another 15 mts of time for Jamuns to absorb the Sugar Syrup. Then you are done to enjoy them. Some trusted brands are Gits, MTR, Bambino.

Tip: Do not make the gulab jamun mix too watery. Add very little water to make thick poori like mix. Basically the mix should not be sticky. Also when you roll them to balls, make gooseberry like small balls. As they enlarge when you fry and when they are immersed in syrup they enlarge further to get lemon ball size. 



       Now most often you will be left out with Sugar Syrup in excess and the Oil on which you fried your Jamuns. That is where many other sweet recipes help you to avoid wastage. One such a choice is simplest "Shahi Tukda". So let me brief on this recipe.

Ingredients for Shahi Tukda:

                      Sugar Syrup - 1/4 cup to 1 Cup ( preferably left over syrups are good enough)
                      Refined Oil - 1 or 2 Cups
                      Wheat bread - Each bread cut into two triangles. - Pick the breads based on serving count you need
                       Condensed Milk - Milkmaid or Amul's
                       Grated Almonds for garnishing

Way to Go:

  •  Unless you have left over Sugar Syrup, make one by boiling equal quantities of Sugar and water together until Sugar dissolves to form a Syrup. We do not need any consistency like one or two thread string consistency etc, so complete dissolve of Sugar is good enough. And keep the Syrup warm till you finish the recipe.
  • Now deep fry the triangle bread pieces to brown and crisp ( do not burn them). Remove them from oil and drain them off oil thoroughly
  • Dip them quickly in the warm sugar syrup for 3 to 4 seconds. And keep them on a plate.
  • Pour one or two spoon of condensed milk on it and garnish with grated almonds.
  • That is all, you are done. Repeat the same for all bread pieces. Decorate the plate with the shahi tukdas and serve.
  • Enjoy the sweetest joy.
Tip: If you do not have condensed milk, you can make your own by 1 Cup of boiling milk with 1/2 cup of Sugar ( more or less sugar according to your taste), in medium flame with constant stirring ( to avoid sticking at bottom) for sufficient time until Milk reduces to half its amount. This is called Rabri or condensed milk.
