Palak Paneer

  Another simple device from the North Indian Cuisine.. Palak Paneer. A quick to make recipe to go with your Roti, Naan or Chapathi.

Ingredients:

           Serving:  3 and a half :D ( considering a kid)

            Paneer cubes ( immersed in hot water) - 1 Handful
            Onion - 2 medium sized.
            Tomato - 2 medium sized
            Ginger paste - 2 tbsp, Garlic paste -  2 tbsp - Or you can used Crushed ginger and garlic
            Spices:
                 Half a spoon each of - Corriander powder, Turmeric powder, Chilli powder, Cumin powder, Kitchen king masala
                 Bay leaves, Cloves, aniseed ( one or two of each)
                Palak - 1 bundle thoroughly washed in water and chopped.
                lime - A pinch ( Chana dhal size
           Cumin seeds
            Cashews - 10 nuts
            Milk - 1/4 Cup
            Salt to taste
            Butter - 250 g 

Way to go:

  • Pick the paneer cubes after draining them off the water they were immersed in thoroughly. Shallow fry them in oil. Keep aside.
  • Heat a kadai with 1/4 cup of water and add the chopped palak leaves, a pinch of turmeric and lime . Cook it closed with a lid in low flame for 3 to 5 mts. Ensure it doesn't get burnt. 
  • Once the palak is cooked, allow it to cool and puree it in a food processor.
  • Chop the onions finely using the food processor. Keep aside. Now puree the tomatoes with little water using the food processor. Keep the puree separately aside.
  • Heat a three or more spoons of oil in a kadai, and when hot add cumin seeds and crackle them, and when they crackle add bay leaves, cinnamon., crushed garlic and crushed ginger and saute them slightly in low flame.
  •  Quickly add chopped Onions and fry in medium low flame until they turn pink/transparent.
  •  Take 1/4 cup of water and add the spices listed in ingredients. Now pour this spices mixture to the onion and cook for 3 to 4 minutes in medium flame.
  • Now add the pureed tomatoes and saute in medium low flame. Stir periodically to avoid the mixture getting burnt. Cook still for some 4 to 5 mts till tomatoes loose their raw smell and mix well with onions and spices.
  •  Now add the Palak puree and mix well, add salt to taste and cook for two to three mts.
  •  Add the fried paneer cubes to the above mixture.  Cook in low flame for one or two mts and then turn off the heat.
  • Your tasty Palak Paneer is now ready to go with Chapathi, Naan, Roti or any dish of your choice.
