Lets make Pulidarai mix today


Ingredients:

    Masala Powder:
   
                1 teaspoon of pepper
                1 teaspoon of methi seeds
                1 teaspoon of mustard seeds
                4 teaspoons of Jeera
                8 teaspoons of dhaniya seeds
                5 to 6 red chilli ( spicy one)
                Til oil - 250ml or even more as required
                Palmful of curry leaves
                Hing
                Turmeric powder

     For Tadka:

                Til oil
                 Peanuts
                 Cashew nuts
                 Tamarind water thick (about half a litre) - Double the cricket ball size soaked in water and extracted 
                  Grated coconut




Way to go
  • Cooked rice which is cooled. Cook it
  • Roast the ingredients for masala and cool and grind it to coarse powder. Keep this aside
  • Heat few spoons of Til oil, add mustard seeds and crackle it
  • Now add few red chilli, Hing powder, and roast it. 
  • Add peanuts and cashew to roast it
  • Add turmeric powder and roast it mildly
  • Add curry leaves and roast it mildly
  • Add the grated coconut and roast it
  • Now add the turmeric thick juice to it. Boil it until it looses the raw smell and gets thick or reduces to half
  • Add salt to taste.
  • Now add the ground puligare powder. 
  • Add Til oil liberally as required.
  • Cook it until oil seperates.And during cooking check for salt and adjust it.
  • You are done. Now store the excess it in a air tight jar
  • Mix it gently with rice. Do not use ladle as that can mash the rice. Just gently mix with hand.
